Pesto Chick(un) pasta

Pesto Chicken Pasta was one of my favourite meals when i was a kid, always very easy for mum to prepare, and what we thought was ultra nutritious. Think of the kind with grilled chicken pieces(sorry) and pesto made with parmesan. 

So with some handy left over snitzel in the fridge and a bucket load of basil from the farmers market, there was only one thing left to do! AND that was re-create my childhood favourite :D :D

Being a vegan, one of my favourite things is to create healthy versions of my childhood favourites. SO here we go..Are you ready for the recipe? Its super easy

 

Your going to need the following:

Pesto sauce:

3C basil

1C spinach

1/2C walnuts

1/4C nutritional yeast

1tsp pink himalayan salt

juice of half a lemon

2 cloves garlic

 

Other ingredients:

2C spinach

3 x Snitzels (click here to goto recipe for my vegan snitzels)

1 packet of your choice of pasta (i used miso spaghetti)

 

Here comes the method (super, quick easy and basic)

1. Place all ingredients in a food processor, and process until desired consistency, i like it quite crunchy!

2. Cook the pasta according to the packet, you could also spiralise some zucchini's to keep to lowcarb and healthier

3. When the pasta is almost cooked place in the spinach to quickly blanch it, then drain 

4. Mix through the pesto sauce and snitzels
